Allways do a dry rub with salt on both sides maybe a little pepper and a little garlic powder and leave it to absorb for like 20 minutes throw it on the grill in a direct flame untill a good crust is formed then place it in inderct heat untill you reach a internal temp of around 60 c then let it rest for another 5 minutes and eat up
